need suggestions and guidance

I currently have a 20g planted tank that I'm enjoying a lot. However, it was a fish only tank before and therefore doesn't have the proper substrate. This tank is in my classroom (I'm a teacher). I would like to start one at home (another 20 gallon high).

I need suggestions on a type of substrate. I don't want to make my own and would rather have something I can just pour in if possible. I found this and like the black color: It's eco-complete.

Is this any good or are there better options on other sites?
How much do I need. I understand that sometime you put the soil in and cover it with a type of gravel. Is this correct and what type of "cap" is necessary?

Eco Complete will work fine for you. You don't need to cap it with anything. There are lots of options, each with its own strong points and weak points. But, any of them will work for growing aquatic plants. This is a good overview to read:
