Are these cuttings from other tanks or are these tissue cultures, or are these plants from a store?

If tissue cultures its not uncommon for them to melt and then regrow. Some store plants have the same issue since they were likely recently grown emersed.

When you say your plants are growing in sand but dies in the soil, do you mean in the same tank? Or is this a different tank its growing well in?

Is anything living well in this tank? It sounds like this is a new tank so you might just need to let things sit a few weeks to see if you get new growth after the old dies back.
