How deep is too deep substrate

When I look at pics or videos I see some planted tanks where in the back there looks like 6" deep substrate. How deep is to deep . I know my saltwater tank I have 0-3" and have snails and horseshoe crabs to keep it stirred up and prevent anaerobic pockets.. So what's the deal with how deep can I go ? Or what do I do

Most scaped tanks have an illusion of 6" deep substrate but under that 6" is plastic crating, there's really no to deep though from what I've read, I've seen people who run tanks that do no water changes have an ultra thick substrate bed specifically layered so they can get away with no water changes

I built my hills up with lava rock in mesh bags. Covered that with a couple inches of BDBS. Using rock as a foundation helps to prevent anaerobic gas pockets.
