Eco-Complete shelf life?

Right now I just have a KL (kitty litter) substrate in my 55 as it was the easiest, fastest cheapest thing I could find at the time. I'm thinking I may break the tank down next summer and replace the substrate with eco-complete but rather than spend $100+ dollars on substrate all at once I thought perhaps I could sort of collect them one at a time until I'm ready for this project. Now I notice that there's supposedly some sort of bacteria or something in the stuff? Will sitting around in the original package for 6+ months not be a good idea? Or should it not make a difference?

The packages should have dates on them. I think Eco's supposed to have a 12 month shelf life.
