ZooMed 501 trouble

I recently replaced a craptastic PFE-3 filter from truaqua in my truaqua ST-320 with a ZooMed 501. Part of doing this, I added more fish than I should have (first nano, used to working on large tanks) and the ammonia spiked and i lost some fish, but I am putting that behind me...

I am noticing though that with the new canister making ripples on the surface, I seem to not be getting good gas exchange. I am running about 14w of LED (one of which being one of those 10w flood lights hooked up to a PWM dimmer) no idea of the PAR, I chucked the light that came with the tank, was not bright enough. But since putting the new filter in (2 days ago) my fish have been gasping, or at least that is what I think it is, even my pleco is doing it. Rapid fast breathing and my non bottom dwellers are right at the surface. My only thing I am not sure of is that when I ran CO2 in my bigger tank, I had a needle valve fail and essentially dump half a tank of CO2 in the tank so I had fish gasping (all made it!!) and this is definitely NOT the same type of gasping.

While I do not mind running an airstone... I dont want to as it kind of wrecks the looks IMO, unless I could get a small column of very fine bubbles. I would be worried about the water splashing up on my lights and creating a film too as this previously happened.

I am not sure if this is just the bio being built back up as I moved everything from the old filter to the canister and added the bio media from the canister in there. I am also running the stock sponge and purigen too.

Now while I know I messed up with the ammonia thing, I dont think that is the problem now as I have gotten it down to just above nothing (a slightly deeper yellow on the API test kit).

Any suggestions would be so appreciated! And I understand if hate is brought too, I effed up... but I will do everything I can to save it as I love this tank
If you need any more information, let me know! All other parameters are in check except the nitrates are a smidge high, but that is due to the well water I am using, But I run it in every other tank I own from my green severum tank to my angel tank, no trouble with it.

There is ALWAYS a need for MORE filtration.
40b high tech, 20h low tech, and more 10g than I am willing to admit.
75g in the works (maybe discus high tech?)

Have you checked nitrites? I'm guessing you checked when you say all other paramaters are ok, but just making sure that was part of it.

yup, ammonia is essentially gone, nitrites are now up... though that is to be expected (yay new mini cycle....)

not 100% sure if any of these cause lowered oxygen levels though.

Also I have noticed that with the spray bar even pointed up at the water creating a ripple that I have a film on the top so I have added an airstone, much to my dismay. I am going to get some chopsticks to see if i can get smaller bubbles but I am surprised this is even an issue because it is just some cherry shrimp and a baby bristle-nose and a random danio.
