Plant Trimmings and Cleaning

I am enjoying this hobby very much, and had my first trimming! Everything sounds great, except the cleaning up part!

So any tips on trimming plants? I trimmed my HC down, but im not entirely sure if its to low or too high. I kinda just trimmed off to make it look even. But I noticed some areas grew very dense. So those areas it almost seemed like a sin to mow it down. My dwarf hair grass got the same treatment, cut them to about half an inch to an inch.
Any general rule of thumb on trimming plants would be great.

And finally, all the trimmings that float up, whats the easiest way to get them out of the tank? I just grabbed a net and did the best I can to scoop them up, but a bunch gets stuck on the sides of the glass and its hard to pick them off. And it seems soon as clean it, more pieces just show up!
