Unhappy Help Needed for Spec V Tank

I have a Fluval Spec V I am trying to populate with plants but I am having some trouble. This is my first time with live plants so please forgive my learning curve here. Right now I have Anubias Nana Petite and Staurogyne Repens. I probably had 7 plants total and there wasn't much coverage, I just wanted to get them started and give them room to grow. They did for a while but everything sort of crashed a couple weeks ago. The S. Repens has died back a lot and only 2 of the plants I originally added are still alive. The Anubias is living but isn't producing any meaningful growth, even after more than 2 months.

Tank Details:

I am using Fluorite substrate for planted tanks. I use RO water conditioned with RO Right*.

Lighting: Stingray LED (2.5 watt/gal)
Temp: 78*F
PH: 8.3
GH: 3.0
KH: 2.0

*I started using RO water after I lost fish (different setup) to what I believed to be possible water quality issues. I know that RO Right is considered to be non-ideal for plants by some and may switch to another product. I recently started supplementing with Flourish (Trace), Phosphorous, and Potassium - maybe that is what kept the plants alive?

Well, first off

All the plants that are in there right now are slow growers, the s.repens are medium to high light at least and are strongly recommended to have co2. So if they are growing a tiny bit that is good.

What plants would be more ideal for my tank?
