Is this Champagne yeast any good?

I've just ordered this 100g champagne yeast for a DIY Co2 setup.
They say ferments up to 18 % alcohol.
What difference between this and the regular yeast?

What recipe to use ,in order to obtain a lower pressure in the tank? Tank is 4 gallons.
Can I use the same recipe as for normal yeast ,or do I add less Turbo yeast ,since it ferments longer?

Can't come to work today ,Boss......I've got Bolbitis...

It's a different strain of yeast where it ferments in 18% alcohol as stated. Bread yeast stops at a lower alcohol amount.

Use the same recipe as other yeast.

I would keep an eye on fermentation rate... some of these yeasts that tolerate high alcohol levels ferment really fast and violently. (I homebrew beer as a hobby, and I have managed to shoot yeast onto the ceiling before..)

I'd be a little careful when using the various brewers' and vintners' yeasts. Not only do they produce CO2, but there are volatile aldehydes, ketones and, of course, alcohols that are produced. I really don't know if they have any effect on your tank, because they may be very small amounts.
