DIY CO2 - Why does it come in spurs?

I have made the same DIY CO2 using a 2l bottle. Some times it's nice and steady, others it comes out in spurs.

I'd prefer steady amounts of Co2 (bubble every second or so)
instead of spurts of bubbles every 5-10sec

Any idea what may cause some to be steady, and others not?

Try hooking it up to an airstone. Maybe it's clogged. Also depends on your room temperature as it affects the yeast metabolism rate. Maybe the room temp fluctuates throughout the day. It should be steady enough though not to be 5-10 secs into 1-2 seconds.

Cuz they're cool looking!!!

Your CO2 may come in spurts due to having difficulty overcoming the pressure inside the tank, especially if you're using a glass diffuser. I'd try a limewood airstone to diffuse it and see if that helps.

If you have a check valve, it's that. The check valve requires a higher pressure to open it than it does to keep it open, so it cycles.
