DIY led dimmer?

I bought a fluval 30in led from my lfs for $50 bucks (practically new) and its light output is a little too strong for my 29g low tech tank. Could I buy a standard light dimmer from a hardware store and dim the lights that way or is there a better way to do it?

Nope- the dimmer won't work with the Led light. Your only option, short of re-wiring the led light to make it dim-able, is to block some of the light output. Window screen or light diffuser plastic placed between the light and the tank should do the trick.
