CO2 bottle life span

I noticed something very interesting with the diy CO2 bottle. After 7-14 days when the generating is almost over, if you dump the mixture in a bowl and let it there for bout 1 hour then put it back in the bottle and the generation starts again and keeps on bubbling for another 4-5 days or so.
I guess it has to do with the "bad" alcohol that buils up in there and evaporates as soon as the mixture goes into the bowl speeding up production.
