Glass color doesn't matter. But I prefer plastic. Remember you're going to be moving, emptying, and refilling these on a regular basis; they will be heavy enough without glass adding to the weight.
I ran a 46G successfully on two gallons. Every setup is a little different, but three gallons will be a good starting point.
Standard brewers yeast is fine to start with. Just make sure its the normal stuff, not anything that says "fast rise"; that will give you a large surge of CO2 then quickly burn out.
