new 75gal biotope advice recommendations please

Hi everyone,
I am new here and was hoping to get some ideas for a new 75gal. Project
I have kept fish most of my adult life. A majority dedicated to saltwater systems. For freshwater I have done Malawi cichlids, discus and a short time with a planted community tank.
Right now I am in the process of selling my discus and gathering ideas on a south east asian biotope.
What I have so far for gear is the glass 75gal tank. For filtration I will be using a Tunze riverpack and a large ehiem canister filter.
For lighting I have 1 Kessil A360 freshwater led light controlled by a Bluefish controller.
For heating and feed cycles I am using a Neptune Apex controller.
I am looking for advice on fish, stocking levels, plants or any other interesting ideas for this project.
I think I will eventually need to add another kessil light but am hoping to get by with the one for the time being.
Some fish I am tossing around are some kind of loaches (???). Maybe glass catfish, danios, rasboras or any other kind of interesting fish. As well I am not sure how many to have of a species. I know if I do glass catfish I should do somewhere around 10. Also loaches like a school.
Another thing I may need to think about is in what order I stock this system?

I love loaches and I hate glass tops. But you need covers otherwise you will lose your loaches to jumps.

If you get some loaches, yoyos are my.favorite. get like 8-10. They like being in groups.

Toto loaches are one of the loaches I am looking at. The other being Burmese border loaches.
Definitely have glass hinged covers for the top. Not fun loosing fish over the top?
