I've seen my amanos swimming at the surface of the water during feeding time, but I haven't seen them try to jump.

ive had a few jumpers when i first got amano shrimp but after they settle into their home, they dont jump anymore. i guess b/c they're comfortable. just make sure your tank is covered and the shrimp have algae and hiding spots. they may disappear but that doesnt mean they've jumped.

I'm more worried about your Betta attacking and killing your shrimp...

Yep. My Betta was very industrious about hunting down and murdering every single one of my shrimps when I put them in the tank. $40.00 worth of shrimp down the hatch in one afternoon!
