Well water help

I live on a well and had always measured the pH right out of the faucet instead of letting it sit for 24 hours. When I measure it right out of the faucet it measures 7.0. After 24 hours it is more then 7.6.
In my 125 gallon tank I inject CO2 and the pH meter reads 6.4 - 6.5 and the checker is light green. As the week goes on the checker starts to get more blue even though the CO2 rate has not changed. The plants are doing very well.
What happens to the pH if I run the water through a RO/DI unit?
I would like to have a more consistent water when I do water changes. I know in the past when I have measure hardness it was considered very soft, usually in the winter months. Recently I measure it was around 90.
Is the pH altered by CO2 what the fish are actually experiencing?
What should I do to a planted shrimp tank that I'm not injecting CO2 in?
Do you know of any good articles to ready about water?
If more info is need just let me know.

well water

Well water was my largest challenge where I live as its really bad for what I wanted to keep. R O decreases TDS (GH,KH or total desolved solids) thats what really changes your pH readings. If you do a search for strings I started here on TPT water is high on a short list. Injecting CO2 and relating that resulting pH number to what your critters are swimming in is a false reading as the pH reading is driven down by the CO2 but the GH, KH of the water remains.
This took me awhile to understand until the good members here were kind enough to hold my hand untill I uderstood.
