Upsetting substrate - high Nitrates?

I was moving stuff around the other day trying to catch fish. I pretty much tore everything out except my huge sword. Tank is a couple months old - would this cause a big jump in nitrates from 0 - 80? I've never had a nitrate reading in this tank.

ammonia and nitrite are 0

ei dosing but didn't do last water change but only a couple days late. Switching the pps method soon. I'll do a water change tomorrow assuming I have time.

Fish aren't overloaded at all either.

Yes, I have seen this happen in several ways. Sometimes it is just moving one or two plants.

I would do water changes that include getting into the substrate a bit. Not much. Just one or two grains deep. Just enough to get stuff out of the substrate. Sometimes just hovering over the substrate is enough. You want the water you are removing to come from the substrate.
