pH fluctuations

Hello, i just recently started into the aquarium hobby with a planted tank, although right now i only have some micranthemum monte carlo and some dwarf hair grass.

I'm a bit worried about the co2 influence on the pH of the water. I built a simple yeast co2 reactor and it works well but i can't decide if it should stay on at night or not. I notice when i leave the co2 off at night the pH rises to about 8.1 in the morning which seems alot. When adding co2 during the day it lowers to about 6.9 (and probably lower if i don't turn it off).

I don't know if those parameters are safe for the fish and shrimp i keep now, i know that fluctuations are stressfull for the fish. Any ideas how to keep the co2 levels more consistent?

it is a two 1.5 liter bottle reactor so i can remove one i guess, or just regulate the co2 somehow.

pH swings due alone to fluctuating CO2 do not seem to bother livestock - my pressurised setup swings from 7.7 to 6.5 each day.
