Very high GH does what???

While I see that GH is good, mine reads over 600 at the outside tap. By doing 50/50 tap and undersink R/O I've now gotten to around 360. Well, what effect does too low or too high GH have on the plants/fish. I believe that plants/fish need the naturally occurring minerals in the water but is too much detrimental to some plants/fish? Hope this question makes sense.

My fish seem to be doing fine; I see all my vals shredding? quickly in my tank, but other plants do well, IF my platys leave them alone!
Other parameters are KH<> 80 and pH<> 7.2 Low to medium light? (24" Coralife 2 bulb T5NO and Marinelife Double Bright LED 11 hours/day) in a 36 bowfront, no CO2, weekly liquid ferts and 3 times per week Excel and DIY Osmocote capsules about every 6 weeks in a Walmart No-Scent Kitty Litter substrate.

And let me take this opportunity to say thanks to the many members who often go well out of their way to help everyone.

Some day I hope to understand at least 20% of what I think I know. And maybe someone can explain the other 60% to me.

You're having trouble with your Vals because you're dosing excel. GH should only really effect shrimps.
