Nitrate--Better to Have Too Little or Too Much?

I'd like to get people's advice on something...
I am going to be gone on a couple week-long trips this month, and I am debating on whether I should have someone clean my 75-gallon while I'm gone or not. Nitrates, Nitrites, and Ammonia are all at zero. The thing is, I have plants, so I need some Nitrate present...I'm not sure whether to err on the side of levels that are too high or too low..

If you have no nitrates, your plants must be able to consume all they are given. I'm not sure how cleaning is going to affect that unless you are thinking it will create an ammonia spike. Are they going to fertilize as well?

Edit: Just thought about it. If you have nitrates in your water used for water changes, I would think that would be low enough, and your pants would consume it all.

Having someone mess w/ your stuff is always problematic.
My first reaction would be just to dim the lighting for a week..
