I am relatively new to aquarium plants, i currently have a 20g high with a coralife 65w pc and really like it. (fast growers grow about an inch a day).

Now ready to move bigger !! I am now putting together a 75g to plant heavily and community fish. I will be adding an automatic pressurized co2 system. I need a recommendation for high lighting. I do not wanted to be limited on what i can grow. I am leaning towards Custom Sealife or Coralife 4x65w, but they are very pricey. Is that too much light ? Also it would be nice to be able to run open top tank with no glass top. I am not totally opposed to hanging a DIY from the ceiling (if there a suggestions for that kit) but would rather spend my time doing other stuff.

Get the aqualight 4 x 65 with the stands, I think it makes a good open top tank.

I'm not a fan of open topped tanks. Too much potential for airbourne contaminents to get in, and aroudn here the water just evaporates too quickly.
4 55watt bulbs will be your ideal setup. You can build a canopy, or buy the light hood Coralife makes, but MAKE SURE you get the freshwater aqualight, as it comes with 6700K bulbs. The 'normal' one has 2 daylight and 2 actinic lights = you have to buy 2 additional bulbs at $20-$40 a piece.
