I hooked it up yesterday to my 55 gallon tank. I have a topfin 60 H.O.T filter and I placed an airstone inside the filter near the impellar, every plant in my tank is pearling and leaking 02. The floss in my filter is covered with C02 bubbles, so far I think it is working well. My mixture is 1 3/4 cups sugar 6 cups water and 1 teaspoon yeast. How long will this mixture produce C02? will the rate drop quickly after a couple of days?

There are many many factors that determine how long CO2 production lasts. You just have to watch it... One teaspoon of yeast is a lot, I usually use 1/8 to 1/4 for my 3 liter bottles. I suppose that makes them produce less, over a longer period. Mine last about 4 weeks.
For a 55 gal tank, I would use 2 bottles, and change them at different days, to always have at least one bottle at full production at all times.

Why does more yeast make the solution last longer?

It doesn't. More yeast, more production, lasts for a shorter period.

Oh i see, my solution isn't foaming so hopefully it will last awhile. I'm hoping for 2 weeks.
