two of my eriocaulon parkeri start to flower now. anyone know what should I do with it?

Cut or pull the flower stalk off. Once they flower, they can simply melt away because they are true annuals.

its better to just pull it.. the plant uses more energy on flowering better for it to use energy elsewhere
