Question about substrate sizes

I've heard that if you mix two sizes of substrate the bigger ones will shift to the top and the smaller ones will shift to the bottom.

In that case can I put gravel on top of sand and will it stay that way?

Yes, if you do it that way, the gravel will stay on top.
