I love electric blue rams, so I'd go with option 1 personally (and opt for the espeis - they're so little and cute and really color up well in the home aquarium, fish store tanks don't do them any justice!)

I'm no expert, but your fish and shrimp combos look like they could lead to shrimp being on the dinner menu.

Electric Blue Ram. Great little fish. A male from one of my breeding pairs. He is about 1 1/2. And I keep shrimp in every tank with dwarf cichlids and once and awhile they'll make a meal out of them but they're fine for the most part.

As long as the amanos are big enough, the rams won't touch them.

Even for a lot of the smaller shrimp, the Rams won't eat them. It's only on occasion that they actually make a meal out of them. At first they will definitely check them out and nip at them and chase them around but the novelty wears off really quickly and within a couple days the Ram's will be used to them being there and you'll even see shrimp out cleaning with Ram's swimming around not even bothering them.
