Would cherry shrimp do okay in regular black gravel?

sure thing. Substrates dont matter as much as your water parameters

black gravel...blue, red, yellow, no gravel LOL

Cherries are good in just about any gravel as long as the water parameters are within the range.

You could raise cherries in a 5 gallon bucket in your garage. They aren't picky and are harder than a coffin nail.

They survived a whole weekend for me in a five gallon with some sand and no filter. I forgot to plug the filter in. Oops. They're tough
