Tips On Cutting/Trimming Please

About a month ago I converted my 65 in to a high tec planted tank. 182w out of 10000k compact fluorescents and pressurised CO2. Its time to do some serious pruning. Ive done a bit here and there but I have some red ludwegia and cabomba that are out of control. The problem is the healthier fuller leaves are obviously on the newer growth. I dont want to cut off all the new growth and leave basically what I planted from the LFS. I would appreciate all tips on pruning etc.

On a side note one of my anubias sent up a flower which is pretty cool.
