55 Gallon Redo

I am planning to completely redo my 55 gallon planted tank this winter and I am looking for suggestions on plants. My set up is as follows: an AquaClear 110 power filter, pressurized CO2 fed directly into the filter intake tube, a Hagen GLO T5HO 2-bulb light fixture with 2-54 watt bulbs suspended 10 - 12 inches above the tank. I will be adding clay for iron content, a layer of CaribeSea FloraMax topped with mostly CaribeSea EcoComplete substrate.
The redone tank will have a textured rock style background from universalrocks.com with the filter intake, heater and CO2 line covered by the same rock-style surface so no tank equipment should be visible.
I am looking to get some depth using plants even though this tank is only 12.5 inches deep and I will be adding a medium piece of mopani wood and some rocks. Any suggestions on plants would be appreciated.
