Default 20-Long S. American 'scape?

Currently, my 20-long is a mish-mash. SA fish (GBR, corys, neons), non-SA inverts (Amano and cherry shrimp, MTS and assassin snails), black sand, a couple small wood pieces, Dwarf Sag, Java moss, Vals, and Bacopa. I'd like to give the tank a makeover, make it an actual, planned scape with a South American theme. I'm thinking add a couple big pieces of manzanita and keep the Dwarf Sag (and moss, mostly because it'd be near impossible to completely get rid of it). What other plants would be good? I like the thought of Echinodorus quadricostatus, if I can find it.
