Where can I buy a CO2 canister or "lay a deposit down" for a swap and fill? I am in Tempe, Just outside Phoenix.

If you can't get it local, try http://www.beveragefactory.com. One of the guys in LA was going to buy one and shipping would have been $8 for a 5# if I hadn't picked it up for him. Can't hurt to call!

Did you ever find a place to get a cylinder? I might need one soon...

look up Phoenix welding. I bought a 10lb cylinder from them for 80-90 i think and refills are about 14 or 15. They just replace your cylinder each time so you dont have to worry about getting it recertified or whatnot (plus your in and out in like 10 mins)
