Savory Cheese Scones
To make approximately 16 scones
4 cups flour
2 teaspoons cream of tartar
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
freshly ground pepper to taste
1 teaspoon dill weed (or to taste)
1 tablespoon chopped rosemary leaves (or to taste)
pinch cayenne pepper
1 teaspoon full dry mustard
4 ounces grated cheddar cheese (sharp)
1/2 cup butter
1-2 tablespoons olive oil
1 1/2 cup buttermilk
Sieve together dry ingredients.
Rub in fat.
Add milk and mix to a soft dough. Do not over-knead.
Spread into pan 3/4 inch thick and cut into triangles, or form into 2" mounds.
Bake for 15 to 20 minutes at 400 degrees F.
Makes a nice alternative to sweet pastries. Cheesy and flavorful! Serve with butter and/or cream cheese. Goes well with egg dishes.
