Corn salad - makes for a great side dish for the summers months. Quick and easy.
1 15 oz Whole kernel corn (drained)
1 green pepper
1 red onion
1 1/2 cup shredded cheddar cheese
2 cups Mayo
1 16 oz bag of chili corn chips
Dice onion green pepper into small pieces. Combine first 5 ingredients and chill 30 minutes to an hour. Just before serving crush up corn chips and mix with other ingredients.
