I've seen chocolates listed as sakura. Sakura is Japanese for cherry blossom so it makes more sense that cherry shrimp be rated as a sakura grade, but really, I don't see why it can't apply to chocolates as well.
As far as a grading system for cherries, I thought it was pretty well established. There's a handful of charts with examples that show the grades and they are all pretty much the same. I think the only thing that gets confusing is the multiple names for the highest grade even though they are all pretty much the same.
