Default shrimp coloration and breeding

I bought some orange neos from a local seller and I found that one of the orange neos I bought was actually yellow. I found 2 threads on here saying that most of the time neos that breed will go wild type but orange and yellow neos just vary slightly in color (between orange and yellow somehow). Is there a reason for this? (genetics or it just happens, etc)

Also, some of the orange neos are striped-ish, not fully orange yet. Does shrimp color develop over time? The ones in my tank that are orange are like mini Sunkists running about.
