Now that I think of it, you may be able to use straight up sphagnum moss also. Even when wetted, it should look significantly different then peat moss, plus it would be easier to break the raw material up into smaller grains.

I'm worried that if you used the coconut fiber, it would end up looking like you just had a bunch of hairy ropes in your tank or something...

I have no idea how this would work, but you may be able to get away with using a sawdust from a 'safe' type of wood as well...
