Nice write up. I've used a similar mix sans carbon and the results have been great. Are you planning to use raw or composted cow manure? For the compost, you can try replacing them with worm castings.

Mosses will do just fine above the waterline. Water will wick up the wood and emersed moss and keep it moist without any additional spraying.

Most of the time the MTS in my Badis tank stay in the substrate. You can add some pond/bladder and ramshorn snails if you want a cleanup crew that the badis won't bother.
