They should be fine. Snails are really hardy animals. As long as they stay moist they can live out of water for a long time.

A 45 gallon tank with a 200 gph overflow will cycle the tank approximately 5 times per hour. Usually you want 5-10 times per hour in a planted tank, so I think it will work just right.

That is correct. The fishless cycle is to get the biological filter up and running before adding any fish. In my experience it can take 4-6 for a tank to cycle.
