I would say endlers as my first choice (I've never seen them bother their young) but if you want to watch some excellent parenting behavior, try convict cichlids. But be prepared for lots of babies...

I just want to point out that the Denison Barbs would probably appreciate having more swimming room, length-wise. I believe 4 ft is generally considered the minimum for them.

Maybe cut the roots in a circle around the plant with a knife and leave the remaining roots in place? I know those plants can REALLY put out the roots, sometimes across the whole tank.
