The green plants in the bunch look like Mayaca...

The green plants in the bunch look like Mayaca fluviatilis. The single red plant is probably Ludwigia acurata.

the red plant in the first photo might be an Alternanthera species grown emersed...

It depends on the species. The so-called amazon swords, E. bleherae, amazonicus, etc., really prefer to be submersed, and the leaves dry out easily when emersed unless the humidity is very high. ...
