Yes, Onyx sand will raise pH and hardness. It is NOT suited for keeping cardinal tetras, who need their water very soft and acidic. Onyx would fit with livebearers or mbunas.

A 2075 would be fine for 90g. It should also take care of your circulation if used wisely. Eheims pro filter media are also very good and can be used in any canister filter.

I would not put artificial grit that is 78% Aluminium in my tank, no matter if they say it doen't react with water. This is blasting grit, and it is not meant to be constantly under water for years....

To my knowledge, moss rock is sandstone. If it is a tan&brownish color, it is silica sand. Shouldn\t affect your water chemistry.
