Albino cories seem to be more active than others. Mine swim around like that for an hour or two after feeding, water changes and when spawning (which seems to be right after most water changes).

It really doesn't make much difference though - just go with whatever looks better to you.

To me playsand looks more natural...

as far as i know , they will only eat dead or dying plants/leaves. Not live ones. The plants were most likely starting to melt already.

You can plant immediately. It may raise ammonia levels a bit but an established filter should take care of it easily. Won't hurt the plants but test for few days before adding fish.
