It's definitely not ich. If you ever seen ich, you'd know right away that it isn't ich. Tough to tell if it's an injury or something such as columnaris by the photos though.

I've kept and still do keep cherry and Malayan shrimp with Ram's. They'll take one out from time to time but nothing that really affects the shrimp population. I'm sure ghost shrimp would be fine.

The salt is really not needed when doing this. I've never used salt and had no problems taking it out with just heat for 2 weeks. Just one more thing that you really don't need to put in the tank.

Those plants should be just fine. My brother has all African Cichlids from the three big lakes and in a few of his tanks he has plants. Anubias and Ferns seem to do the best and surprisingly there...
