Stress does not cause ich, that's old urban legend stuff. About the dead leaves, they wouldn't be adding to nitrite readings, it would be more of a phosphate reading.

Flashing can happen when fish are trying to court a mate, or have ich as its a way to "scratch" themselves. Only 2 things I'm aware of or seen.

Personally I've never seen a clutch of eggs eaten by snails unless the parents abandoned them. Typically in all my instances the fish keep the snails away. I think you'll be OK.
