Did you forget dechlorinator after your water change? Did the tap water smell particularly like chlorine? If your bio filter crashed after a water change I would suspect it was chlorine in the water...

Eh, my GT doesn't bother any of the smaller fish in the tank. I've put convict fry in the tank from time to time and she doesn't even chase them. The tiger barbs usually end up picking them off.

I agree on the KNO3 being fine for snails. My goldfish tank has pretty high nitrates and the snails in there are quite healthy(lots of algae to eat).
