pH calibration solutions question

Which pH solutions do you use for two point calibration? 4.0 and 7.0 or 7.0 and 10.0? My water is naturally high in pH (8.5+) and I am controlling at 7.0.

What is the likelyhood of aquatic snails surviving in the septic tank? There could be some aerobic and anarobic zones that might accomidate them. I know they would not be harmful, maybe even helpful....
