In my experience, a lot of cory eggs don't get inseminated so they're basically studs. It's the ones that don't turn white that are viable.

I use sponge filters for my shrimp tanks but for my other tanks I just buy plastic scrubbies and dump them into a HOB for bio filtration and rinse every so often. It has worked thus far :)

I don't there think is much else you can do. I feed Hikari First Bites after their yolk sacs are gone. I find, for my own BNs, that the initial live-ratio is pretty high but they might start to drop...

I've successfully treated ich with just high temperature. Since I had cories and plecos, I was hesitant to use salt.

I would be wary of using meds...

I suggest Celestial Pearl Danios, one of my favorite fish. A lot of people will tell you that they are shy but mine aren't at all. They should be fine with your shrimp.
