Very good start, but probably needs more plants, or just some time to fill in.
Yellowish water is from the tannins in the wood, I assume. If not, you may need some nerite snails or a pleco.

Actually, the sunfish thing could work. Check local laws and what species you have. Something like a dollar sunfish would keep numbers down and wouldn't put up with anything from the convict.

It varies. They're probably gravid again. If they're getting plump and have gravid spots (one spot per fish, large black spot near anal fin), they're definitely gravid and will have babies soon.
