I think I put too much in my new tank, can I just store excess in some tupperware or ziplocks? Do I need to refrigerate it?

It's not been planted but it has been cycling in my tank the last week.

It's a lot more eqpt, a lot more careful monitoring, a lot more lighting, and just a lot of work. Worth it though. I wouldn't try to convert a fw aio into sw, get a sw aio to start.
