My water was running low pH around 6 but I got a water filtration unit that increased it so I am sitting around 7.5 - 8. My water is pretty much in the middle as far as hardness.

I can't tell for sure but it look likes your anubias are buried in the substrate. They wont last that way, attach them to rocks or driftwood.

You are right on the money it's slime mold, perfectly harmless and super interesting. I have one in my tank and it's really cool to look out for it when it moves from place to place.
