CO2 tanks ... any pressurised container need to be kept away from the reach kids. ti could have been a lot worse if the kid toppled the cylinder...... better keep the cylinder in a place kids cant...

When you add plants there wont be a cycle, the ammonia etc are used by the plants. give the plants a couple of weeks to settle in the tank and then you can start adding the fish.

Reduce the water level to what you need, cover the top with a plastic sheet and tape the sheet to the glass. this should hold the moisture in and keep the plants healthy for a few days

If you are using a small co2 cylinder secure it to the stand. Empty aluminium cylinders weigh very less and may tip over due to the weight of the CO2 regulator. This can damage the regulator.

Try feeding raw/semi boiled egg yolk. It may be able to consume this more easily than any other type of food. Better do this in a QT tank, as you will be doing a lot of WC's with this kind of food.
