No. All that evaporates is the water. The minerals are still there but since the water has less volume the minerals are more concentrated. Adding distilled or RO just brings it back to par.

Yes. Like that. I've got one I bought 20 years ago. You will find it's a PITA unless you put a pump on that check valve. Given my druthers I'd drill the tank.
